Tomato, Onion & Cheese Baked Egg Tortilla Is it an omelette? Is it a quiche? These baked eggs are baked in a tortilla “crust” and can be enjoyed warm or cold, so perfect for breakfast, brunch or lunchboxes. Tomato and cheese is a classic combo, but you can try any additions you like.
Ingredients
- 1 tortilla
- 4 eggs
- Salt & pepper
- Handful cherry tomatoes, cut in halves
- 2 scallions, sliced
Method
- 1. Pre-heat oven to 180°C / 160°C fan assisted.
- 2. Press the tortilla into a shallow pie dish then crack in the 4 eggs. Season with salt and pepper then scramble them.
- 3. Add the tomatoes and scallion, then sprinkle over the grated cheese.
- 4. Bake until the centre is set but it still has a very slight wobble, about 20 minutes.
- 5. Leave to cool in the dish for about 5-10 minutes before cutting.
