Introduction
These overnight oats make the most of delicious summer strawberries! It’s a simple breakfast to prepare ahead, perfect for busy mornings and breakfast on-the-go. The yoghurt and milk can be swapped for your preferred non-dairy alternatives.
Ingredients
- For the strawberry milk
- 150g strawberries, washed & trimmed
- 500ml milk
- 60g plain yoghurt
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- Ingredients
- 200g oats
- 2 tbsp chia seeds or ground flaxseed
- +- 100g strawberries, washed, trimmed & diced
Method
- 1. For the strawberry milk, combine all ingredients in a food processor or blender and blitz until smooth.
- 2. In a large bowl, mix the oats and chia seeds, then add the strawberry milk and stir well to combine.
- 3. Cover the bowl and refrigerate overnight.
- 4. Serve with fresh diced strawberries.
- 5. The oat mixture can be kept in the fridge for 3-5 days.
