We love overnight oats, it’s quick and easy to prepare and great for busy mornings because it’s already made and waiting in the fridge. It can even be enjoyed on-the-go! Flavours and varieties are endless, and this version made with banana, cocoa powder, peanut butter and a little bit of chocolate feels more like a dessert than a delicious breakfast! This is a single serving, but the recipe is easily increased for more portions. We like re-using old jam jars to prepare them in, but use any container or bowl you have on hand.

We love overnight oats, it’s quick and easy to prepare and great for busy mornings because it’s already made and waiting in the fridge. It can even be enjoyed on-the-go! Flavours and varieties are endless, and this version made with banana, cocoa powder, peanut butter and a little bit of chocolat
Ingredients
- 40g oats
- 2 tbsp cocoa powder
- 1 heaped tbsp milled flaxseed
- 220ml milk of choice
- 1 tbsp honey or maple syrup
- ½ banana, sliced
- 1 tbsp peanut butter
- 1-2 pieces 70% dark chocolate
- Chopped peanuts to serve, optional
Method
- 1. In a small bowl, mix together the oats, cocoa powder and flaxseed. Add the milk and honey or maple syrup, and mix to combine.
- 2. Drop slices of banana in the bottom of a clean jam jar or your preferred container or bowl, then spoon the oat mixture on top.
- 3. Warm the peanut butter in the microwave so that it’s pourable, then pour this over the top of the oats. Place in the freezer for about 5 minutes.
- 4. Melt the chocolate in 5 second bursts in the microwave, stirring between each burst, until chocolate has just melted.
- 5. Pour the chocolate over the top of the peanut butter, and sprinkle the top with chopped peanuts. Fasten the jar or container lid and refrigerate overnight. Enjoy served cold the next morning.
