Introduction

This gloriously gorgeous green goddess dip combines salty feta with sweet avocado and a trio of herbs to make a creamy, tangy and heartily herby dip that’s bright and refreshing. It’s also a breeze to make!

Ingredients

  • 1 ripe avocado
  • 200g feta cheese
  • 1 generous tbsp plain Greek yoghurt
  • About 20g fresh parsley (with stalks)
  • About 10g fresh dill (with stalks)
  • About 10g fresh mint (with stalks)
  • 1 clove garlic, peeled
  • 2 scallions, ends trimmed off, roughly chopped
  • Juice from 1 lime
  • ½ tsp flaky sea salt
  • TO GARNISH:
  • 1 tbsp extra virgin olive oil
  • 2 tbsp toasted pistachio nuts, roughly chopped
  • 2 tbsp pomegranate seeds

Method

  • 1. To prepare the dip, spoon the avocado flesh into a food processor then add the remaining dip ingredients. Blitz until smooth. (You may need to scrape down the sides of the processor’s bowl once or twice to make sure all ingredients are thoroughly combined.) Taste for seasoning and add more salt or lime juice if preferred.
  • 2. Spoon dip into a serving dish then garnish with the olive oil, chopped pistachio nuts & pomegranate seeds.
  • 3. Serve with flatbreads, crusty bread, crackers or fresh veggies.
