Introduction
Spicy Prawn Cocktail Liven up this favourite festive season starter with a little bit of a spicy kick with the simple addition of sriracha sauce. Quick, easy, tasty; perfect for a delicious start to your Christmas dinner. Scale recipe up to suit the number of dinner guests
Ingredients
- 75g mayonnaise
 - 75g tomato ketchup
 - 1-2 tsp sriracha sauce (to taste)
 - 1 small shallot, finely chopped
 - Dash of paprika
 - 150g prawns, cooked & peeled
 - To serve
 - 8 baby gem lettuce leaves, rinsed & patted dry with paper towel
 - Sriracha sauce
 - Paprika
 - 4 small wedges lime
 
Method
- 1. In a bowl, mix together the mayonnaise, ketchup, sriracha, shallot and paprika. Taste for seasoning and add more sriracha if desired.
 - 2. Add the prawns and mix through. Tip: At this stage, this can be stored in a sealed container in the fridge for up to 3-4 days before serving.
 - 3. To serve, spoon prawn cocktail mix into small serving bowls or glasses. Arrange 2 baby gem lettuce leaves in each glass against the side (use leaves large enough to be use as scoops or edible cups for the prawns) then drizzle with a dash of sriracha sauce and a lightly sprinkling of paprika. Finally, add a small wedge of lime to each glass.
 - 4. Serve chilled.
