Introduction

This classic eton mess is the perfect dessert for summer made with only a few ingredients and is quick to prepare. Lightly sweetened whipped cream is folded with broken pieces of meringue (we use meringue nests found in the dessert aisle) and juicy summer strawberries. Simple yet delicious.

Ingredients

  • 250ml fresh or double cream
  • 50g icing sugar
  • 1 tsp vanilla extract
  • 250g strawberries, washed & trimmed
  • 50g meringues

Method

  • 1. In a large bowl, combine the cream, icing sugar and vanilla then whisk to soft peaks.
  • 2. Roughly chop the strawberries and add to the whipped cream, then break in pieces of the meringue.
  • 3. Fold together then serve immediately. You can garnish with extra strawberries if you like.
