Ingredients
- 6 tbsp porridge oats
- 1 tbsp seed mix
- 1 large egg
- 80ml milk
- 1 tbsp honey
- ½ tsp vanilla extract
- 50g blueberries
- 50g raspberries
Method
- 1. Pre-heat oven to 190°C / 170°C fan and grease two ramekins with melted butter or oil.
- 2. In a bowl, mix together the oats and seeds, then add the wet ingredients and mix to combine.
- 3. Fold in ¾ of the berries then spoon the mixture equally between the two greased ramekins.
- 4. Press the remaining berries lightly into the top of the mixture, then place ramekins on a baking tray and bake until they’re set in the middle and a sharp knife comes out without any uncooked mixture on it, about 15 minutes.
- 5. Leave to cool for about 5-10 minutes before enjoying while still warm, topped with a dollop of your favourite yoghurt or a drizzling of honey.
