Introduction
Green Pea Hummus The vivid green colour and natural sweetness of this green pea hummus makes it a lovely alternative to a traditional chickpea recipe. Serve with fresh veggies or crackers for dipping. Recipe sponsored by Kenwood Ireland.
Ingredients
- 250g frozen green peas
- 1 small clove garlic, peeled
- 1 tbsp tahini
- 2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- Salt, to taste
Method
- 1. Put frozen peas into a medium sized heat-resistant jug or bowl. Pour a kettle of boiled water over the peas and leave to sit for 1-2 minutes. Drain peas in a sieve or colander then tip peas into the bowl of the food processor (if using a larger Kenwood processor, fit with the 1.5l mini bowl and blade).
- 2. Add the clove of garlic, tahini and lemon juice. Process until mixture is smooth (scrape down the sides of the bowl from time to time to make sure everything is well blended).
- 3. Add the olive oil and a pinch of salt, then blitz until mixed through. Taste and add more salt if needed. (Olive oil can become bitter when overly processed, so adding it at the end once you’re happy with the texture is key.)
