A cute appetiser for your Christmas table, these soft cheese trees are quick and easy to make, and you can try different toppings! Use a soft cheese with rind like Gubbeen or Brie, or for the kids, Laughing Cow triangles. We’ve adorned our little cheesy trees with finely chopped dried cranberry, toasted pecans and fresh thyme, but you could use dried apricot, pistachios or walnuts, and any soft herb like parsley or sage.

Ingredients

  • Gubbeen, Brie or similar soft cheese with rind
  • Pretzel sticks
  • Dried cranberries, finely chopped
  • Toasted pecan nuts, finely chopped
  • Fresh thyme, chopped

Method

  • 1. Cut the cheese in half horizontally so you have 2 rounds of cheese. Cut each round into 4 or 6 triangles, depending on the size of your cheese.
  • 2. Gently push a pretzel stick into the bottom rounded end of each cheese triangle for the ‘trunk’ then lightly press the cut & ‘sticky’ side of the cheese into the chopped cranberries, then pecans, and finally, the thyme.
  • 3. Arrange on a dish for serving. You can finish with a little bit of flaky salt and ground black pepper, if you like.
