Introduction
This is a quick and easy dish that tastes delicious. Perfect to keep in the fridge for up 24 hours.
Ingredients
- 2 tsp sesame oil
- 2 bok choi, finely shredded
- 1 carrot, julienned
- 1 red pepper, thinly sliced
- 400g cooked brown rice
- 2 tbsp dark soy sauce mixed with 1 tsp sugar
- 80g salted peanuts
- 6 scallions, thinly sliced on the diagonal
Method
- 1. Heat the oil in a large wok over a high heat. Add the bok choi, carrot and red pepper, stirring for 1-2 minutes.
- 2. Add the rice and cook for a further two minutes, stirring constantly. Add the soy sauce, peanuts and half the scallions, tossing to combine.
- 3. To serve, garnish with the extra scallions, with extra soy sauce on the side.
