Introduction
Try our gorgeous Spiced Pork Cakes with Chilli Dressing. An ideal starter or light lunch dish – this is a super handy dish to have in your repertoire
Ingredients
- 500g pork mince
- 2 scallions, finely chopped
- 1 tsp Thai red curry paste
- 2 Tbsp coriander leaves, finely chopped
- 50g fresh bread crumbs
- 1 egg, beaten
- 100g Panko bread crumbs
- 2 Tbsp sesame seeds
- Oil for frying
- 200ml mayonnaise
- 3 Tbsp dill leaves, finely chopped
- 1 Tbsp chilli paste
- 1 lemon, zested and juiced
- Lime wedges to serve
FOR THE DRESSING:
Method
- 1. Preheat oven to 180°C/350F/gas mark 4.
- 2. Combine the pork mince, scallions, curry paste, coriander leaves, bread crumbs and egg together in a large bowl and mix well. Shape mixture into 10 - 12 patties. Roll each patty in the combined Panko crumbs and sesame seeds until well coated.
- 3. Heat oil in a non-stick pan over a medium heat and cook for 2 - 3 minutes on both sides until golden. Remove patties from the pan and place on a baking tray.
- 4. Finish the pork cakes in the oven for 8 - 10 minutes.
- 5. Combine the mayonnaise, dill leaves, chilli paste, lemon zest and juice in a small bowl.
- 6. Serve the spicy pork cakes with the dressing and lime wedges
