Spiced Pork Cakes with Chilli Dressing

Ingredients

  • 500g pork mince
  • 2 scallions, finely chopped
  • 1 tsp Thai red curry paste
  • 2 Tbsp coriander leaves, finely chopped
  • 50g fresh bread crumbs
  • 1 egg, beaten
  • 100g Panko bread crumbs
  • 2 Tbsp sesame seeds
  • Oil for frying
  • FOR THE DRESSING:
  • 200ml mayonnaise
  • 3 Tbsp dill leaves, finely chopped
  • 1 Tbsp chilli paste
  • 1 lemon, zested and juiced
  • Lime wedges to serve

Method

  • 1. Preheat oven to 180°C/350F/gas mark 4.
  • 2. Combine the pork mince, scallions, curry paste, coriander leaves, bread crumbs and egg together in a large bowl and mix well. Shape mixture into 10 - 12 patties. Roll each patty in the combined Panko crumbs and sesame seeds until well coated.
  • 3. Heat oil in a non-stick pan over a medium heat and cook for 2 - 3 minutes on both sides until golden. Remove patties from the pan and place on a baking tray.
  • 4. Finish the pork cakes in the oven for 8 - 10 minutes.
  • 5. Combine the mayonnaise, dill leaves, chilli paste, lemon zest and juice in a small bowl.
  • 6. Serve the spicy pork cakes with the dressing and lime wedges
