Introduction

Snickers-Style Energy Bites Energy bites make great little snacks to keep the hangry away. Brew a cup of tea and enjoy one of these made with sticky dates, which gives a lovely caramel flavour, peanut and chocolate. Sponsored by Kenwood

Ingredients

  • 200g pitted dates
  • 50g cashew nuts
  • 50g roasted & salted peanuts
  • 50g oats
  • 2 generous tbsp smooth peanut butter (no sugar)
  • 2 generous tbsp coconut oil, melted
  • 2 tbsp cocoa powder
  • 50g dark chocolate, for drizzling

Method

  • 1. Pulse together dates, nuts and oats in a Kenwood food processor until roughly chopped.
  • 2. Add the peanut butter, coconut oil and cocoa powder, process until mixture starts to clump together.
  • 3. Take about 1 tbsp of the mixture and squeeze it together, then roll into a smooth ball between the palms of your hands. Place on a tray. Continue until all the mixture has been rolled.
  • 4. Partially melt the dark chocolate in the microwave, stir until the residual heat has melted it completely, then drizzle over the protein balls. You can also sprinkle the tops with chopped peanuts for a finishing touch.
  • 5. Store in an airtight container at room temperature.
