Introduction
Roasted veggies are simple to make, but are incredibly delicious. Just the thing when you have a lot of things happening in the kitchen.
Ingredients
- 6 large carrots
- 4 parsnips
- 1 medium butternut squash
- 1 head of garlic
- 125g honey
- 60ml olive oil
- Few sprigs of thyme
- Few sprigs of rosemary
- Sea salt
- Freshly ground black pepper
Method
- 1. Preheat oven 220C/200C fan assisted/gas 7.
- 2. Wash vegetables and peel if desired. Cut into large chunks but keeping the veg pieces in roughly the same size.
- 3. In a large bowl, toss the vegetables in the honey, olive oil, sea salt and pepper. Arrange on a large roasting tray. Tuck the garlic cloves in between the veggies along with thyme and rosemary.
- 4. Bake for 30-40 mins until veggies start to char slightly on top and tender.
- 5. Transfer to a serving dish and serve.
