Porridge With Blueberries
Easy
Porridge is an excellent way to start the day, but I find it hard to make a small amount. If you don’t fancy it yourself, simply place in a bowl and cover with clingfilm once cool. Pop into the fridge and reheat gently with a little extra milk the following day. It will sit happily in the fridge for up to 3 days. Ingredients
- 150ml milk
- 20g porridge oats
- Small handful of blueberries
Method
- 1. Put the milk into a heavy-based pan and bring to the boil. Stir in the oats and return to the boil, stirring. Reduce the heat and simmer for 4–5 minutes or according to the packet instructions, until the oats are cooked through, stirring occasionally.
- 2. To prepare the blueberries, place them in a small pan with 1 tablespoon of water. Cook for 3–4 minutes over a low heat, until softened and just beginning to pop.
- 3. Divide the porridge among bowls and top with the blueberries.
