Introduction
Pea, Bacon & Feta Salad – This is a fantastic side salad. Sweet peas with bits of salty bacon and chunks of feta. A delicious summer salad that’s great with a Sunday roast.
Ingredients
- 2 tbsp olive oil
- ½ tbsp white wine vinegar
- ¼ tbsp dijon mustard
- ¼ clove garlic, crushed
- Pinch of salt & pepper
- 150g bacon lardons
- 450-500g frozen petite pois peas, defrosted
- 1 small red onion, cut in half and finely sliced
- 150g feta cheese

Method
- 1. To make the dressing, combine dressing ingredients together in a small jar or plastic container. Seal with the lid and give a good shake. Set aside.
- 2. For the salad, start with cooking the bacon lardons. Heat a medium sized non-stick pan on medium high heat. Once hot, add the bacon and cook until golden on all sides, between 5-7 minutes. Remove bacon from pan and leave to cool on kitchen towel.
- 3. Once bacon is cold, combine with defrosted peas and onion slices in a large bowl. Gently toss mix together. Crumble in large chunks of feta cheese and drizzle with dressing and give a quick mix.
- 4. Keep chilled until ready to serve. Will keep in the fridge in a sealed container for 2 days.
