This traditional brown soda bread is incredibly easy to make and is thoroughly delicious. However you prefer to enjoy it – still-warm with lashings of butter, dipped in soups, spread with honey or jam, served with a hearty breakfast – this bread is a healthy Irish classic. We’ve topped ours with mixed seeds, but you could also top it with oats, or leave it as-is.

Ingredients

  • 250g wholemeal flour
  • 200g plain white flour
  • 2 tsp salt
  • 1 tsp bread soda
  • 350ml buttermilk
  • 1 egg, beaten
  • 1 tsp honey
  • 2 tbsp mixed seeds or oats, optional

Method

  • 1. Pre-heat oven to 200°C / 180°C fan assisted and line a 1lb loaf tin with parchment paper.
  • 2. In a large bowl, mix together the flours, salt and bread soda. Form a well in the centre of the dry ingredients and add the buttermilk, egg, and honey, then mix with a wooden spoon to combine the ingredients, scraping down the sides of the bowl to make sure all of the dry ingredients are incorporated. The mixture will be quite sticky but don’t add any extra flour.
  • 3. Spoon the mixture into the prepared loaf tin and level the top with the back of a spoon.
  • 4. Optional, sprinkle the surface with mixed seeds or oats.
  • 5. Dip a large knife in water then score the unbaked loaf down the centre, pushing the knife about halfway down into the mixture.
  • 6. Bake in the pre-heated oven for 40-45 minutes. To check that the loaf is fully baked, carefully remove the loaf out of the tin using the parchment paper to lift it and tap the bottom of the loaf, it should sound hollow.
  • 7. Leave to cool on a wire rack.
