Introduction

Ingredients
- 250g wholemeal flour
- 60g plain flour
- 1 tsp bread soda
- 1 tsp salt
- 100g treacle
- 60g porridge oats
- 1 tsp brown sugar
- 30g butter
- 100ml Guinness
- 200ml milk
- 1 tbsp porridge to sprinkle on top
- 1 cucumber
- 1 tsp salt
- 1.5 tsp white wine vinegar
- 1 tsp caster sugar
- 1/2 tsp coriander seeds
- chopped dill
- 1 tbsp lemon juice
- 1 tsp lemon zest
- Edible flowers for garnish

Method
- 1. For the Guinness bread, preheat your oven to 180°C/160°C fan. Grease and dust a 2lb loaf tin and set aside.
- 2. In a small bowl, add the butter and treacle and melt in the microwave and set aside to cool slightly.
- 3. In the bowl of your Kenwood mixer fitted with the K-Beater, add the wet ingredients first followed by the dry and mix until combined.
- 4. Spoon into the prepared tin, sprinkle some porridge oats on top and pop into the oven for 50mins.
- 5. Once baked, carefully remove from the tin and pop on a wire rack to cool.
- 6. For the pickled cucumber, cut in half lengthways and remove the seeds from the centre.
- 7. Using a peeler, peel ribbons of cucumber into a bowl and sprinkle on the salt and set aside for 20 minutes then pour off any excess liquid and add the remaining ingredients and allow to sit for 5 minutes.
- 8. To serve, slice the cooled Guinness bread, you can spread on butter if you wish, top with the pickled cucumber and edible flowers.
