Introduction

These little brownie bites are packed full of nutritious ingredients. The cottage cheese is rich in protein, which helps to keep us feeling fuller for longer, making these little bites the perfect snack for the school lunchbox. Created by Nessa Robins

Ingredients

  • 300g full fat cottage cheese
  • 100g oats
  • 50ml honey
  • 1 egg
  • 2tbsp cocoa powder
  • 2tsp vanilla extract
  • 1tsp baking powder
  • Zest of 1 orange
  • 50g raspberries

Method

  • 1. Preheat the oven to 180°C/ fan 160°C/gas mark 4. Line a 12-hole muffin tin with 12 large muffin cases.
  • 2. Add all the ingredients, apart from the raspberries to a high-powered blender and blitz for a few seconds, until combined. Stop once during blitzing to scrape down the sides before blitzing again for a few moments.
  • 3. Divide the batter evenly between the muffin cases. Top each one with a couple of raspberries and gently press to ensure they stick.
  • 4. Place in the pre-heated oven for 25 minutes. Transfer to a wire rack to cool before storing in the fridge for up to three days. Enjoy!
