Introduction

These chewy fruity granola bars are simple to make and are naturally dairy and gluten free if you make sure to use gluten free oats. You can also choose to not bake them, which is great for raw diets. A perfect snack!

Ingredients

  • 200g oats
  • 50g shredded coconut
  • 100g almonds, roughly chopped
  • 100g raisin, sultana & cranberry mix
  • 2 tbsp coconut oil
  • 250ml honey

Method

  • 1. Line a 25cm/10inch square baking pan with parchment paper. If baking, preheat oven to 180°C/350°F/gas 5.
  • 2. Mix dry ingredients together in a large bowl, set aside.
  • 3. Over medium heat, melt coconut oil and honey together in a small saucepan. Once coconut oil has completely melted and mixture is runny, pour over dry ingredients. Mix together until there is no dry mixture left.
  • 4. Tip mixture into prepared baking tin. Lightly spread out so that it's in all corners, then firmly press down making sure it's well compacted. If leaving raw, allow to cool before cutting into bars.
  • 5. If baking, place tin in oven and bake for 10-15 minutes until golden. Leave to cool on wire rack, once cool, cut into bars. Bars will keep for up to 2 weeks at room temperature in an airtight container. Bars can be frozen for up to 3 months.
