Introduction
A delicious Thai starter everyone will enjoy.
Ingredients
- 6 breasts of chicken
- For the marinade:
- 2 tbsp soy sauce
- 1/2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 garlic cloves, crushed
- 2 tsp brown sugar
- 1 tsp fresh ginger, grated
- 1 tsp lime juice
- For the peanut sauce:
- 1/2 tin coconut milk
- 2 shallots, cut finely
- 1 red chilli, de-seeded and finely chopped
- 2 cloves garlic, crushed
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 2 tbsp crunchy peanut butter
- juice of a lime
- salt and pepper
Method
- 1. Slice the chicken into thin flat strips and then thread the chicken pieces onto eight skewers and place in a large dish.
- 2. Combine the marinade ingredients together. Pour the mixture over the chicken and leave for half an hour or overnight if possible.
- 3. Cook the chicken on a griddle pan or under a grill until cooked through.
- 4. Meanwhile, make the peanut sauce.
- 5. Fry the shallots, chilli and garlic in a pan. Then add the lime juice, soy sauce, brown sugar, peanut butter and coconut milk. Simmer for a minute or two to allow the flavours to combine.
- 6. Serve the sauce in a little dipping bowl with the chicken skewers.
