Ingredients

  • 1 kg roasting potatoes, washed
  • 4 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp flaky salt
  • ½ tsp ground black pepper
  • 200g cheddar cheese
  • TO SERVE:
  • ½ tub sour cream
  • ½ packet fresh chives, chopped
  • Hot sauce of choice, optional

Method

  • 1. Pre-heat the oven to 200°C / 180°C fan assisted.
  • 2. Cut potatoes into long wedges then rinse with water and pat dry with paper towel.
  • 3. Transfer potatoes to a large roasting dish.
  • 4. Drizzle over the oil and sprinkle with smoked paprika, salt and pepper. Toss well so that the potatoes are all evenly coated.
  • 5. Bake in the pre-heated oven, turning potatoes over halfway through cooking, until golden, 35-40 minutes.
  • 6. While potatoes are cooking, grate the cheese in your Kenwood food processor with the large grater attachment.
  • 7. Once potatoes are cooked, sprinkle cheese evenly over the top then return to the oven until melted and bubbling, about 5 minutes.
  • 8. To serve, spoon over sour cream, sprinkle generously with chopped chives, and add a drizzle of hot sauce.
