Ingredients
- 2 Ballyfree Cranberry, Oats & Spinach Turkey Burgers
- Mixed leaves
- Peppers, sliced
- Red onion, sliced
- Cherry tomatoes, quartered
- Radish, sliced
- Cooked quinoa
- Mixed seeds
- Juice of 1 lime
- 80ml olive oil
- 1 tbsp Dijon mustard
- 1 tsp honey
- 1 tsp salt
- ½ tsp cracked black pepper
FOR THE SALAD
FOR THE DRESSING:
Method
- 1. Fry or grill the turkey burgers (follow the cooking instructions on the pack) making sure they’re cooked through.
- 2. Whisk together all of the dressing ingredients together in a jug or small bowl. Set aside.
- 3. To assemble the salad, arrange a few handfuls of mixed leaves on plates and then scatter over sliced peppers, red onion, cherry tomatoes and radish. Sprinkle a few spoonfuls of cooked quinoa over the salad. Place cooked turkey burgers on top of salads then drizzle with salad dressing. Finally, sprinkle with mixed seeds.
