Ingredients

    FOR THE SALAD
  • 2 Ballyfree Cranberry, Oats & Spinach Turkey Burgers
  • Mixed leaves
  • Peppers, sliced
  • Red onion, sliced
  • Cherry tomatoes, quartered
  • Radish, sliced
  • Cooked quinoa
  • Mixed seeds
  • FOR THE DRESSING:
  • Juice of 1 lime
  • 80ml olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 tsp salt
  • ½ tsp cracked black pepper

Method

  • 1. Fry or grill the turkey burgers (follow the cooking instructions on the pack) making sure they’re cooked through.
  • 2. Whisk together all of the dressing ingredients together in a jug or small bowl. Set aside.
  • 3. To assemble the salad, arrange a few handfuls of mixed leaves on plates and then scatter over sliced peppers, red onion, cherry tomatoes and radish. Sprinkle a few spoonfuls of cooked quinoa over the salad. Place cooked turkey burgers on top of salads then drizzle with salad dressing. Finally, sprinkle with mixed seeds.
