SuperValu’s Hampshire Ham

SuperValu has launched a  brand new, mouth-watering Hampshire Ham (Gluten Free) range available in SuperValu stores now (€60)

The Hampshire breed is one of the oldest breeds of pig in existence today and is renowned for offering the leanest, most delicious meat. The pigs are easily identified by the black coats which sport a unique white belt around the shoulder and front legs. Hampshire pigs are reared on Bord Bia approved farms.

Research figures have shown that seven out of ten consumers chose SuperValu Signature Tastes Glazed Hampshire Ham over standard ham in taste tests.

Kevin Dundon’s Glazed Irish Hampshire Ham

Serves 10 plus leftovers

Ingredients:

  • 5 kg Hampshire Irish ham fillet
  • 1 onion, peeled and studded
  • with 3 cloves
  • 1 carrot
  • 1 bay leaf
  • FOR THE GLAZE
  • 250g apricot jam
  • 50ml brandy

Method:

  1. Place the ham in a large heavy-based saucepan. Add the studded onion, carrot, bay leaf and enough cold water to cover the ham completely. Bring to the boil, then reduce the heat and allow to simmer for about 1 hour for a 1.2 kg ham, or 20 to 25 minutes per 500g.
  2. Remove from the heat and allow the ham to cool in its cooking liquor.
  3. Meanwhile, combine the apricot jam and brandy in a small bowl.
  4. Preheat the oven to 160°C/gas mark 3.
  5. Place the ham on a baking tray. Using a sharp knife, carefully remove the skin from the ham, then score the fat in a criss-cross diamond pattern. Spread the glaze over the ham with a spoon.
  6. Bake in the oven for 15 to 20 minutes, until the glaze is golden brown. Remove from the oven and rest for 20 minutes, loosely covered in a foil tent, before carving. Serve warm or cold.
