5. Slow Cooker Vegetarian Tagine
The beauty of any slow cooker meal is the ease of cooking. Even though, we’ve started by sautéing the onion, to add a little sweetness to the dish, all the other ingredients need only be added to the cooker and within a few hours you’ll have the most deliciously flavoursome dinner. Plus, your kitchen will be filled with the warming scents of this Moroccan inspired dish. The quantity below is suitable for a 4 litre slow cooker. 4. Slow Cooker Vegetarian Enchiladas
Enchiladas cooked in the slow cooker might not be as aesthetically pleasing as those prepared in the oven, but it’s still a heart-warming dish with an array of delicious flavours. What we also love about this dish is that everything is assembled raw and then left to cook gently in the slow cooker, great for throwing together before you get on with your day then ready to tuck into later; warm, maybe a little mushy, but so tasty!
3. Three Bean Chilli
This three bean chilli is perfect for colder weather when you want something warm, spicy and filling. This simple-to-make meal is plant based and you can easily double up on the ingredients for a batch-cooked meal that can be portioned for easy meal prep or even frozen for nights when you don’t feel like cooking. If you are a meat-eater, you can swap out the veggie stock for chicken or beef stock.
2. Harissa Grilled Veggies with Chickpeas
This is a one-pan oven dish that’s packed with flavour, colours and textures. Eat a rainbow of veggies spiced with fragrant ras al hanout and chickpeas coated in slightly spicy harissa paste. We love to serve it topped with dollops of tangy lemon hummus, crumbled feta and a sprinkling of nigella seeds, then serve with a side of rice, couscous or quinoa. You can use any of your favourite veggies and, if you’re not vegetarian or plant-based, you could also add cut up pieces of sausages.
