1. Blueberry & Lemon Oat Crumble Bars
These bars are a fantastic as a breakfast bar or afternoon snack. The oat mixture is used for the base and crumble, and the jam is set with chia seeds so it’s quick to make and uses less sugar. 2. Granola Bars with Dark Chocolate
While you do need to toast the dry ingredients to enhance the flavour of the oats, nuts, and seeds, this is a no-bake recipe that makes delicious chocolate-coated granola bars absolutely packed with crunchy seeds and nuts. Great for an on-the-go energy boost or enjoyed as an afternoon snack with a cup of tea. You can do these in a smaller tin or tray to make them thicker depending on your preference. 3. Nut Free Seed & Choc Chip Snack Balls
These nut free seeds balls are great as an on-the-go energy-boosting snack. They’re quick to make and will keep for up to 1 week in the fridge. You can also double or triple the recipe and freeze them to enjoy later. Great for lunch boxes! Watch the video here.
4. Snicker Style Rice Cake Bars
Use crumbled rice cakes to make this Snickers-inspired treat. The crumbled rice cakes are mixed with peanut butter and maple syrup then pressed into a loaf tin. For the caramel layer, sweet and sticky dates are used, then everything is topped with a luscious layer of dark chocolate. Finally, some chopped peanuts finish off this tasty snack! The rice layer will soften so it’s similar to a soft nougat, but if you prefer a crunchy treat, swap some or all the rice cakes for Rice Krispies. Watch the video here.
