Editor’s Blog – What We’re Really Eating For Dinner, Thursday

So the sun is shining. Well, it’s trying to shine through the clouds, but it’s warm. My kids are on their third outfit change and water play is the name of the game. We were going to have fish finger burgers for dinner tonight, which we all LOVE, but the day that’s in it has heralded a menu change. Our local supermarket is selling 700g packets of  free-range chicken wings for €3, so we are taking advantage.

I have marinated the wings in a jar of Franks Hot Sauce and they will sit in the fridge until this evening, when I will slow roast them at 160C for just over an hour. At this point, the meat will be falling off the bone and perfect to eat, but I like to finish them for a minute or two on our barbeque. If you don’t have a gas bbq like us, and don’t fancy burning up some charcoal for three minute’s work, I DON’T BLAME YOU. Just whack the wings under a hot grill for about five minutes to char up the skin. Or, enjoy them simply roasted.

We will have our wings with corn on the cob and potato salad, made with baby potatoes, scallions, mayo and mustard. i will boil the potatoes and when still warm I will toss them in a mixture of 3 tablespoons of mayo to 1 heaped tsp of Dijon Mustard. The still-warm potatoes will absorb the creamy dressing and be just GORGEOUS. Once the salad is cool, I will pop in the fridge to chill and just before serving, toss through some sliced scallions. Easy peasy, mid week barbie!
