Ingredients
- 275g plain flour
- 225g butter, chilled and cubed
- 100g white sugar
- 1 tsp vanilla extract
- +- 400g mince pie filling
- Icing sugar, for dusting
Method
- 1. Pre-heat oven to 180°C / 160°C fan assisted and line a 23x23cm (9x9inch) square cake tin with parchment paper. Tip: allow excess paper to hang over the sides, this will make it easier to lift the bake out of the tin.
- 2. Place flour, butter, sugar, and vanilla in the bowl of a stand mixer, then mix just until the ingredients come together with a very crumbly texture like breadcrumbs.
- 3. Alternatively, pulse in a food processor to a crumbly texture.
- 4. Spoon 2/3 of the dough mixture into the prepared tin then spread the mixture into an even layer. Press down with flat hands to compact it lightly.
- 5. Spread the mince pie filling on top of the dough right to the edges, then finally, sprinkle over the remaining dough mixture.
- 6. Bake in the pre-heated oven until the dough on top starts to turn a lovely golden colour, 35-40 minutes.
- 7. Remove from the oven and leave to cool completely in the tin on a wire rack. Tip: This will take a little longer as the mince pie filling holds a lot of heat.
- 8. Once cool, lift the bake out of the tin. Cut into 16 squares then dust with icing sugar.
- 9. Will keep for about 5 days stored at room temperature in an airtight container.
