Ingredients
- 175g Butter
- 150g caster sugar
- 115g light brown sugar
- 1 free range egg
- 1tsp vanilla extract
- 260g self raising flour, sieved
- 125g chocolate chips
- Icing sugar, optional
Method
- 1. Preheat the oven to 200°C/fan 180°C/gas 6. Prepare a 28cm cast-iron frying pan by lightly greasing it with a little butter.
- 2. In a large mixing bowl, cream the butter and sugars together, until pale and creamy.
- 3. Lightly whisk the egg in a cup and add the vanilla extract. Slowly add this to the mixing bowl, whisking all the time.
- 4. Add the flour to the bowl and mix gently to combine, before adding the chocolate chips and mixing until evenly distributed.
- 5. Transfer the dough to the prepared pan and press it out to an even layer.
- 6. Bake in the preheated oven for 22-25 mins.
- 7. Remove from the oven and dust over a little icing sugar before serving from the pan with a scoop of ice-cream.
