
Keeling’s Blackberry Frozen Bites

Keeling’s Blackberry Frozen Bites are the perfect after dinner delights.
Makes 12
For the base:
- 140g pitted Dates
- 100g pecan Nuts
- Pinch of Salt
For the blackberry mixture:
- 125g blackberries
- 280g cream cheese
- 125g vanilla yoghurt
- 125ml double cream
- 4 tbsp honey
To decorate:
- 12 blackberries
Method:
- Line a muffin tin with 12 paper cupcake liners.
- For the base, combine the dates, pecan nuts and salt in a food processor. Process until finely ground. Spoon the mixture into the bottom of the muffin tin (about 1 ½ tbsp) in each well, then press mixture down with your fingers.
- For the blackberry mixture, place blackberries in a food processor and blitz until smooth. Add the remaining ingredients and process until smooth and well mixed, scrape the sides of the processor bowl halfway through mixing.
- Spoon mixture into muffin tin, about 3 tbsp in each. Give the muffin tin a shake to help level and smooth the tops, then decorate each one with a blackberry.
- Freeze overnight and enjoy.
