Ballyfree Turkey Sausage Rainbow Salad
Serves 2
Ingredients:
- Handful baby leaf spinach, rinsed
- 3 Ballyfree turkey sausages, cooked
- 3 tbsp cooked quinoa
- ½ mango, sliced
- ½ avocado, sliced
- 2 tbsp kimchi
- 3-4 tbsp roasted cubed butternut squash
- Seed mix
- Lemon & herb dressing or vinaigrette
Method:
- Arrange spinach over half of a plate then arrange cooked turkey sausages on top.
- Arrange remaining ingredients (excluding seeds & dressing) in lines over the other half of the plate.
- Sprinkle with seed mix and drizzle with dressing.
- Enjoy!
