Jordan Bourke is an Irish chef and author of the critically acclaimed best-selling Our Korean Kitchen, The Guilt-Free Gourmet and The Natural Food Kitchen. Having trained at Ballymaloe in Ireland, he worked at the Michelin-starred Petersham Nurseries restaurant, London. He now divides his time between working as a food writer, food stylist and consulting for various food brands and restaurants. He lives in London and is married to the fashion designer Rejina Pyo.

The rye gives this sourdough an extra nuttiness. It lasts very well too, but will need to be toasted after a few days to get the best out of it.
Wild Rice, Apple Tomato And Teff Salad
Wild rice retains an earthy bite after cooking, which is delicious here with the juicy apple and tomato. The teff is an optional extra for this salad, so don’t be put off if you don’t have it to hand – it is still delicious without it.
