This week Keelings, Ireland’s largest supplier and producer of fresh fruit, celebrate Berry Breakfast Week. They are encouraging families to start their day with a healthy, wholesome breakfast. Grown on the Keelings farm in north County Dublin, Keelings berries are a tasty and nutritious choice for those early mornings.
Why not get into the spirit of Berry Breakfast week with this delicious recipe for Berry Breakfast Bars from Keelings’ nutritionist, Aveen Bannon. The perfect grab and go breakfast for when you’re dashing out the door, Keelings Berry Breakfast bars are tasty, packed with nutrients, and most importantly, easy to make.
Keeling’s Berry Breakfast Bars
Ingredients
- 1 Banana, mashed
- 50g Light Brown Sugar
- 4 tbsp Honey
- 50g Coconut Oil, melted
- 250g Oats
- 75g Keelings Blueberries
- 2 Tbsp Sunflower Seeds
- 2 Tbsp Pumpkin Seeds
- 2 Tbsp Flaxseed
Method:
- Pre-heat oven to 160°C/140°C Fan and line a baking tray with parchment paper.
- In a large bowl, mix together banana, sugar, honey and coconut oil until well combined. Add the oats and mix through. Add the blueberries and gently fold into mixture.
- Spoon mixture onto prepared tray, flatten mixture down with your hands until evenly spread. Sprinkle the top with the seeds then gently press them in with your hands to make sure they stick.
- Bake for 12-15 minutes then remove from the oven and leave to cool slightly before cutting into bars. Leave to cool completely then enjoy.
To celebrate the launch of Berry Breakfast Week from Monday 18th to Friday 22nd September, Keelings have teamed up with Today FM to give primary school children a chance to win €10K for their school by submitting a 250 word essay. The winning school will enjoy a morning of breakfast fun with a visit from the Keelings Berry Bus as well as a live broadcast from Ian Dempsey.
